Sugared pancake with raisins
Ingredients to serve about five people:
250 g flour
0.5 l milk
raisins, sugar, salt
Stir the flour with milk and 5 yolks until smooth. Gently fold the raisins (according to taste), together with a little salt and sugar and 5 whisked egg whites into the paste. Pour the mixture into hot butter in a pan to finger depth and lightly cook to a golden brown on both sides. Next, cut up the pancake, put onto plates, sprinkle with icing sugar and optionally serve with apple sauce or plum jam.
